Tasting notes:
Intense deep colour with cassis,
eucalyptus and attractive oak spice on the nose.
Full-bodied palate with red and black fruit, chocolate,
rum and raisin and a hint of meaty, earthy, developed

Long hanging-time, selected
harvesting, low yield (0.56tons per hectare), hands-on
winemaking and handcrafting of the wines for 40 months

vineyard, love for wine, love for the soil and love for
a family member who epitomises all that we are today – a
true gentleman from a bygone era – Hannes van Niekerk –
our father and grandfather.

Knorhoek Pantère
2006
Tasting notes: Almonds, youngberries, a hint of
smokiness and white pepper spices makes up a complex
bouquet. Complex fruit flavours with a soft tannin
structure and a lingering aftertaste.
This full-bodied red blend (Merlot 30%, Cabernet Franc
30%, Cabernet Sauvignon 20%, Shiraz 20%) has very good
maturing potential, reaching full maturity after
3 - 5 years.
Cellar: The grapes were fermented separately in open
fermenting tanks (kuipe). Then matured separately for 18
months before blending. The blend is matured in 50% new
French oak and 25% in 2nd and 3rd respectively for a
further 3 months before bottling.

Tasting notes: Rich plum and young
berry flavours enhanced by mixed spice and white pepper
flavours on the nose. On the pallet the wine is soft and
tannins are well integrated with the fruit and oak.

Cellar: The grapes are fermented in
open fermentors and the cap is manually punched down.
This wine is a blend of 43% Shiraz, 25% Cab/f, 25%
Merlot and 7% Viognier, matured in french oak barrels
for 24 months. 30% new oak barrels are used to enhance
the wood and fruit balance. Only 320 x 750mL x 12; 170 x
3L; 97 x 5L were produced.

Cabernet Sauvignon 2009

picked from clone CS46C, which gives very typical
Cabernet Sauvignon character, and clone CS163E. The
grapes are fermented in open fermentors and the cap is
punched down. Matured in French oak barrels only for 20
months. 30% new barrels are used with an even proportion
of second and third fill barrels to enhance the wood and
fruit balance. This is an unfiltered wine.

Knorhoek Cabernet Franc 2007
Tasting notes:
Intense deep colour with blackberries & ripe plum
against a backdrop of teabush flavours. Rich & complex
with a soft tannin structure. A full-bodied serious wine
enjoyed with various meats, ostrich & venison, but also
complements tomato-based pasta. Drink now or in the next
3-5 years.
Cellar: The grapes were picked fully
ripe and fermented in open fermenting tanks(kuipe). The
wine were left on the skins for about 40 days before
racking and pressing. Matured for 22 months in small
French oak barrels, selected 30% new and 25% 2nd and 25%
3rd and 20% 4th fill respectively.

2009 - NEW RELEASE
Tasting notes: Rich plum and young

Cellar: Shiraz grapes are planted at
high altitude on two different aspects namely; warmer
north facing and cooler south east facings soils. Grapes
are picked at optimum ripeness. The Shiraz grapes are
fermented in open fermenters and the cap is manually
punched down. Extended skin contact is given after
fermentation. Matured in French oak barrels only for 18
months. 20% New barrels are used to enhance the wood and
fruit balance.

Tasting notes: Ripe bananas with a nice
integration of oak flavours and a hint of berry fruits
makes up a complex bouquet. Juicy and supple on the
pallet, but with a good structure to make this wine
enjoyable now or in the next five years. To be enjoyed
alone or with a wide variety of meats, game and spicy
foods. Drink now or in the next 3-5 years.
Cellar: The Pinotage grapes were
fermented in open fermenters and the cap punched down.
Matured in French oak barrels only for 12 months. 20%
new barrels were used with an even proportion of second
and third fill barrels to enhance the wood and fruit
balance.

Knorhoek Sauvignon Blanc 2011
Tasting notes:
Complex flavours - predominantly fresh tropical fruit,
especially guava, and a hint of passion fruit, full
round mouth with soft tannins and a lingering after
taste. Well balanced acidity. This traditional old world
unwooded Sauvignon Blanc is an everyday wine with
complex flavours for all occasions, especially salad,
pasta, fish and white meat. Drink now or in the next 2 - 4
years.
Cellar:
The grapes are grown at high altitude and ripened slowly
under cool conditions. Each block is picked seperately
at optinum ripeness in climatic conditions to preserve
the taste of the Sauvignon Blanc grape. The juice is
handled cold reductively to preserve the natural
flavours. A combination of yeasts was used to cold
ferment the juice over a period of 27 days. This is
expressed on the nose with an explosion of fresh fruit
as well as rich tropical aromas. The wine was kept in
stainless steel tanks and left on the lease for a
further two months to prolong the shelve life and reduce
SO2 levels needed for preservasion.

Chenin Blanc 2010
Tasting notes: Tropical, rich, fresh
pineapple and ripe citrus flavours with a smooth
aftertaste and a very good maturing potential. An
unwooded serious food and everyday wine - versatile,
enjoyed even with turkey, duck and Thai food. Drink now
or in the next 2 - 4 years.
Cellar: The grapes are picked from old
bushvines (35 years old) at full ripeness for a specific
full style Chenin Blanc. The grapes are hand selected
and only the best is kept. The juice is handled cold
reductively to enhance the natural flavours. Skin
contact is given for up to 12 hours for maximum
extraction. Cold fermentation in stainless steel tanks.
After fermentation the wine is kept on the yeast lease
for 8 months before it is racked and bottled.

Two Cubs Red Blend 2010
Tasting notes: A complexity of delicate
fruit aromas consisting of black currant and black
berry, supported by flavours of mocca and delicate
vanilla and smokiness. Round on taste with a long
aftertaste. Soft, well-structured tannin and good
balanced acidity. Drink alone or with a wide varieties
of red meats. Drink now or in the next 5-6 years.
Cellar: Grapes were picked by hand in
the early morning to ensure that it arrives at the
cellar in top condition. The bunches were de-stemmed and
crushed and pumped into open tanks. This mixture of
grape skins and juice was cooled down to approximately
8oC for about 3 days. A combination of yeast strains
were used with each cultivar. Fermentation lasted for 7
days after which the wine was left on the skins for
another 23 days before separation. Malolactic
Fermentation was done in the tank and the final
maturation was done in 4th fill barrels with a touch of
oak staves made from pure French Oak. Duration of
Maturation was 14 months.

Tasting notes: Nice balance between fruit and
acidity showing nice fruit flavours and grape aromas.
Excellent for pre-drinks at weddings and other
functions. Enjoy it on it’s own or with lighter meals
such as salads and seafood. Drink now or in the next 3
years.
Cellar: 2 Methods are used. Selected
blocks are picked early for fresh fruity style and
selected blocks are picked ripe where skin contact is
given overnight where after some juice is removed by the
method of Saignée or “bleeding”. This gives a well
balanced wine between fresh and crispy and more
intensity
on mouth feel and flavours. The Juice undergoes cold
fermentation in stainless steel tanks with a white wine
yeast for 4 weeks where after it was filtered and
bottled.

White Blend 2011
Tasting notes: Tropical fruit flavours,
guava, honey, grapefruit and pineapple. Balanced between
fruit and acidity. An easy drinking white wine enjoyed
with green salad, white meat and a wide variety of
seafood. Drink now or in the next 3 years.
Cellar: The grapes are picked ripe to
enhance the fruit flavours. The Sauvignon Blanc is
picked from specific areas inside the vineyard. The
Chenin Blanc is picked from newly trellised vines. The
Sauvignon Blanc was treated reductively to the tank
where it was cold fermented with a combination of
yeasts. The Chenin Blanc was treated non-reductively and
was cold fermented with suitable yeast. Both the Chenin
Blanc and Sauvignon Blanc were left on the yeast lease
for a few months before it was blended together.
