Knorhoek Pantère Bordeaux Stellenbosch Pantère Bordeaux Blend 2011

Tasting notes: Almonds, youngberries, a hint of smokiness and white pepper spices make up a complex bouquet of fruit flavours with a soft tannin structure and lingering aftertaste. This full-bodied red blend has very good maturing potential, reaching full maturity after 3-5 years. Drink now or in the next 10 years

Cellar: The Merlot, Cabernet franc and Cabernet Sauvignon grapes were picked at full ripeness. Each cultivar was fermented separately in open-top tanks (kuipe), then matured separately for 19 months before blending. The blend was matured in 50 % new French oak and 25% in 2nd and 3rd respectively for a further 3 months before bottling.

Knorhoek Pantère Cabernet Sauvignon Stellenbosch Pantère Cabernet Sauvignon 2011

Tasting notes: Intense deep colour with cassis, red berries and attractive oak spice on the nose. Full-bodied palate with red and black fruit, a hint of meaty, earthy, developed flavours is also detected. Long, dry finish. A full-bodied serious wine enjoyed with various meats, including roasted lamb, ostrich and venison, but also complements tomato-based pasta. Drink now or in the next 3 - 5 years, but can easily age for 20 years.

Cellar: Cabernet Sauvignon grapes are picked from clone CS46C, which gives the very typical Cabernet Sauvignon character. The grapes are fermented in open fermenters and the cap is punched down. Matured in 100% new French oak barrels for 24 months. This is an unfiltered wine.

Tasting notes: Tropical, rich, guava, dried apricot, pineapple, ripe citrus and touch of wood flavours with a smooth aftertaste and a very good maturing potential. A wooded serious food and everyday wine - versatile, enjoyed even with turkey, duck and Thai food. Drink now or in the next 2-5 years.

Cellar: The grapes are picked from old bush vines (35 years old) at full ripeness for a specific full style Chenin Blanc. The grapes and berries are hand selected (500 man hours of sorting) and only the best is kept. The juice is handled cold oxidative. Skin contact is given for up to 36 hours for maximum extraction. Natural fermentation (no yeast added) in wooden French oak barrels for 6 months. After fermentation the wine is kept on the yeast lees for 6 months before it is racked and bottled.

Cellar: 79% Matured in French oak barrels for 12 months, 10% of this portion is new barrels. 21% Matured in French oak barrels for 24 months, 10% of this portion is new barrels. A touch of Merlot and Cabernet franc, matured in an even proportion of second and third fill barrels, was used to complete the mouth feel and to add complexity to the wine. This is an unfiltered wine.

Tasting notes: Intense deep colour with blackberries and ripe plum against a backdrop of tea bush flavours. Rich and complex with a soft tannin structure. A full-bodied serious wine enjoyed with various meats, particularly ostrich and venison, but also complements tomato-based pasta. Drink now or in the next 3-5 years.

Cellar: The grapes were picked fully ripe and fermented in open-top tanks (kuipe). The wine was left on the skins for about 40 days before racking and pressing. Matured for 22 months in small French oak barrels, selected 30% new, 25% 2nd, 25% 3rd and 20% 4th fill respectively.

Tasting notes: Rich plum and young berry flavours enhanced by mixed spice and white pepper flavours on the nose. On the palate the wine is soft and tannins are well integrated with the fruit and oak. Drink now or in next five years.

Cellar: Shiraz grapes are planted at high altitude on warmer north facing soil. Grapes are picked at optimum ripeness. The  grapes are fermented in open fermenters and the cap is manually punched down. Extended skin contact is given after fermentation. Matured in French oak barrels for 18 months. 20% New barrels are used to enhance the wood and fruit balance.

Tasting notes: Intense deep colour with a mouth feel driven by berry fruit characters. With soft tannin structure this is an easy Merlot with complex flavours. A medium-bodied, still serious wine enjoyed with various meats, ostrich and venison, but can also be enjoyed without food. Drink now or in the next 3-5 years.

Cellar: Merlot grapes are picked from clone MO343, which gives a strong berry characters, thus fruit driven wines. The grapes are fermented in open fermenters and the cap is punched down. Matured in french oak barrels for 18 months. 20% new barrels are used with an even proportion of second and third fill barrels to enhance the wood and fruit balance.

Knorhoek Sauvignon Blanc Stellenbosch Knorhoek Sauvignon Blanc 2014

Tasting notes: Complex flavours – An explosion of tropical fruit, figs and asparagus aromas, with the lingering of ripe gooseberries on the flavour palate. Well balanced acidity. This traditional old world unwooded Sauvignon Blanc is an everyday wine but still has complex flavours and aromas. Best served with fresh line-fish, risotto or a simple garden salad. Drink now or in the next 2-4 years. 

Cellar: The grapes are grown at high altitude, thus ripened slowly under cool conditions. Each block is picked separately at optimum ripeness to preserve the taste of the Sauvignon Blanc grape. The juice is handled cold reductively to preserve the natural flavours. A combination of yeasts was used to cold ferment the juice over a period of 30 days. This is expressed on the nose with an explosion of fresh fruit as well as rich tropical aromas. The wine was kept in stainless steel tanks and left on the lees for a further two months to prolong the shelf life and reduce SO2 levels needed for preservation.

Cellar: The grapes are picked from a combination of old bush vines (35 years old) and trellised bush vines. The grapes are picked at full ripeness for a specific full style Chenin Blanc. The grapes are hand selected and only the best is kept. The juice is handled cold non-reductively to enhance the natural flavours. Skin contact is given for up to 12 hours for maximum extraction. Cold fermentation in stainless steel tanks. After fermentation the wine is kept on the yeast lees for 3 months before it is racked and bottled.

Pleasant balance between fruit and acidity showing delicious fruit flavours and grape aromas. Excellent for pre-drinks at weddings and other functions. This is a festive, romantic Sparkling Wine for that perfect moment with that perfect someone. Drink now or in the next 3 years.

Cellar: Skin contact is given overnight after which some juice is removed by the method of Saignée or "bleeding". The Juice undergoes cold fermentation in stainless steel tanks with a white wine yeast for 4 weeks and then kept on the lees for a month or two before it is filtered, CO2 impregnated and bottled.

Tasting notes: A complexity of delicate fruit aromas consisting of black currant and black berry, supported by flavours of mocca and delicate vanilla and smokiness. Round on taste with a long aftertaste. Soft, well-structured tannin and good balanced acidity. Drink alone or with a wide varieties of red meats. Drink now or in the next 5-6 years.

Cellar: Grapes were picked by hand in the early morning to ensure that it arrives at the cellar in top condition. The bunches were de-stemmed and crushed and pumped into open tanks. This mixture of grape skins and juice was cooled down to approximately 8°C for about 3 days. A combination of yeast strains were used with each cultivar. Fermentation lasted for 7 days after which the wine was left on the skins for another 23 days before separation. Malolactic Fermentation was done in the tank and the final maturation was done in 4th fill barrels with a touch of oak staves made from pure French Oak. Duration of Maturation was 14 months.

Cellar: After 6 to 12 hours of skin contact, 10% of juice from Pinotage grapes is extracted by the method of Saignée or "bleeding". This extracted juice is nice pink in color and great for Rosé wine. The Juice undergoes cold fermentation in stainless steel tanks with white wine yeast for 4 weeks. Then the resultant Rosé is filtered and bottled.

Tasting notes: Tropical fruit flavours, including gooseberries and pineapple as well as hints of grapefruit. With a good balance between fruit and acidity it is an easy drinking white wine enjoyed with green salad, mushroom risotto and fresh line fish. Drink now or in the next 3 years.

Cellar: The grapes were picked ripe to enhance the fruit flavours. The Sauvignon blanc was treated reductively to the tank where it was cold fermented with a combination of yeasts. The Chenin blanc was treated non-reductively, was cold fermented and aged on the lees for 3 months.
